Hibiscus Lime Margaritas

These Hibiscus Lime Margaritas are tangy, fruity and just slightly sweet! They are the perfect light, bright and refreshing drink to soak up the the last few weeks of summer. You can make the concentrate ahead and shake up these margs in just a few minutes whenever you want!

Ingredients

Hibiscus Concentrate

  • 2 1/2 cups water
  • 3/4 cup hibiscus flowers
  • 1/2 cup agave syrup*

For the Margaritas

  • 1/3 cup hibiscus concentrate
  • 4 ounces freshly squeezed lime juice
  • 4 ounces tequila
  • splash sparkling water (optional)

Instructions

Hibiscus Concentrate

  1. Combine the water, hibiscus flowers, and agave syrup in a medium sauce pan and heat over medium-high heat until the agave has dissolved. Bring the mixture to a boil, reduce the heat and simmer for 5 minutes. Remove the pot from the heat and let the hibiscus steep for 10 minutes. Using a fine mesh strainer, strain the hibiscus from the liquid. Let the hibiscus concentrate cool completely.

Make the Marg

  1. Chill two rocks glasses in the freezer for at least ten minutes.

  2. Fill a cocktail shaker half full with ice. Pour over the hibiscus concentrate, lime juice and tequila. Shake for 30-45 seconds to chill it down. Remove glasses from the freezer and put a few fresh ice cubes in each glass. Pour the margarita evenly between the two glasses and garnish with a slice of lime if you'd like. Cheers!
